Shaved Asparagus Salad with Golden Turmeric Dressing


  • ½ cup hemp seeds
  • 1 Tbsp. fresh lemon juice
  • 1 garlic clove
  • ¼ tsp. turmeric powder
  • 1 tsp. maple syrup
  • 1 tsp. black pepper
  • 6 asparagus spears
  • 2 cups organic arugula
  • ½ cup sprouted chickpeas (can also use canned if available)
  • 1 Tbsp. raw walnuts
  • 1 Tbsp. pomegranate seeds
  • Handful fresh parsley for garnish



To make the dressing, combine the hemp seeds and the next 5 ingredients in a high-speed blender until creamy. Adjust for seasoning. Set dressing aside. Hold an asparagus stalk at the stem; tip pointing away from you, on a work surface. Shave ribbons of asparagus off of the stalk with a vegetable peeler, moving the peeler from the stem-end to the tip. Repeat with remaining asparagus. Transfer asparagus strips to a bowl. Toss with remaining ingredients and serve with dressing and parsley to garnish.
